What's the difference between oil-in-water and water in oil emulsion?

Water-in-oil emulsions and oil-in-water emulsions are the two most basic types of emulsions. Their main difference lies in the dispersed and continuous phases, which leads to vastly different properties, appearance, and uses.

Connect a lightbulb and a battery with wires and insert the terminals into the emulsion.

If the lightbulb illuminates, it's conductive and is an oil-in-water type.

If the lightbulb doesn't illuminate, it's not conductive and is an oil-in-water type.

If it doesn't disperse and floats on the water like oil, it's an oil-in-water type.
